Lisa Selman, Hilton Chicago’s beverage director, tells HP that it can take bartenders three hours to make their own bitters, shrubs or other mix-ins. “’Most likely your cocktails will go up in price the more time it takes to make all of the ingredients that go into it,’” says Selman in HP.
